Fall Pancakes

Hi everyone! It’s been super busy lately with baking for market, building my crotchet stock for the upcoming festivals, and taking care of the farm.

However, Saturday mornings we still like to take some time and relax and start the day with some amazing pancakes. With it being fall, we like to make cinnamon pumpkin pancakes and use some real maple syrup and salted butter on them.

With that being said… here’s the recipe for our favorite fall pancakes:

Cinnamon Pumpkin Pancakes

1 C Flour

2 Tbs Sugar

2 Tsp Baking Powder

1/2 Tsp Salt

1/2 Tbs Cinnamon

1 C Milk

3 Tbs Vegetable Oil

1 Egg

1 C Pumpkin Purée

Instructions:

Mix dry ingredients, then add and stir in milk, oil, and egg until there’s no clumps. Stir in pumpkin and fry on medium heat in greased skillet. I like using 1/3 C measuring spoon to make the perfect sized pancakes. Flip when small bubbles begin to form and pop on top of the pancake.
